Fiqh-us-Sunnah Fiqh 5.115

A person offering a sacrifice may consume, without any restrictions, any amount of meat he may desire. He may likewise give away, or offer in charity any amount he may wish. Some scholars say that one may eat half, and give away the other half in charity, while others say that the meat be divided into three parts. Of these one may keep a part, distribute a part, and give in charity the third part.

Muslim (1318) narrated that Jaabir ibn ‘Abd-Allaah (may Allaah be pleased with him) said:

“On the day of al-Hudaybiyah we offered the sacrifice with the Messenger of Allaah (peace and blessings of Allaah be upon him), a camel on behalf of seven and a cow on behalf of seven.

According to another report, it was narrated that Jaabir (may Allaah be pleased with him) said:

We performed Hajj with the Messenger of Allaah (peace and blessings of Allaah be upon him), and we sacrificed a camel on behalf of seven and a cow on behalf of seven.

Abu Dawood (2808) narrated from Jaabir ibn ‘Abd-Allaah that the Prophet (peace and blessings of Allaah be upon him) said:

“A cow on behalf of seven and a camel on behalf of seven.” Classed as saheeh by al-Albaani in Saheeh Abi Dawood.

The Prophet Muhammad ﷺ said :

« كُلُّ غُلَامٍ مُرْتَهَنٌ بِعَقِيقَتِهِ, تُذْبَحُ عَنْهُ يَوْمَ سَابِعِهِ, وَيُحْلَقُ, وَيُسَمَّى »

« Every boy-infant is a pledge agains this ‘Aqiqah, to be slaughtered on the seventh day, he is given a name and his headis to be shaved. »

(Abu Dawud and an-Nasa’I)

The tenderloin can be bought whole for a roast. The tip is removed to obtain a roast of uniform diameter for even cooking.
The head of the tenderloin can be kept for roasting or cut into steaks 2 to 2.5 cm thick. The butcher can cut small tournedos of 6 to 8 cm in diameter but of good thickness or steaks from the tip.
The real tournedos can only be cut from the tenderloin. It is usually tied and tied up, but this is not essential. If it is caught in another piece of beef, it is called "tournedos style" and must be followed by the name of the piece used.

the fillet of beef is a choice piece, to pan-fry or roast. Cooking it requires certain precautions. Its meat is particularly lean, it dries out and hardens easily if its cooking is not controlled: too much heat or prolonged cooking time.

Cut into thick slices, tournedos surrounded by a bard or Chateaubriand, it must be browned over high heat and on both sides in a pan with a little fat to sear the surface and caramelize the juices to form a crust that will protect it throughout its cooking over a more moderate heat: 2 to 4 minutes per side. Then accompany it with a Béarnaise sauce or a slice of pan-fried foie gras for a Rossini tournedos.

Cooked as a roast, it must be surrounded by a bard which will protect it effectively from the heat of the oven and which you can remove 5 minutes before the end of the cooking time so that it is evenly coloured.

Also remember not to cook it straight from the fridge: leave it to come back to room temperature for a while to avoid a thermal shock during cooking, which could cause the muscle fibres to contract and harden the meat. Similarly, a short resting time under a sheet of aluminium foil will allow the meat to relax and the heat to distribute itself evenly, resulting in even more tender meat.
