Sahih Muslim Hadith 4836 Narrated by Jabir ibn Abdullah

Allah's Messenger (saws) said: Sacrifice only a grown-up animal, unless it is difficult for you, in which case sacrifice a ram (of even less than a year, but more than six months' age).

Sahih Al-Bukhari Hadith 7.476 Narrated by Salama bin Al Aqua

The Prophet (saws) said: (Of the Sacrifice) eat of it, and feed of it to others, and store of it.

Fiqh-us-Sunnah Fiqh 5.115

A person offering a sacrifice may consume, without any restrictions, any amount of meat he may desire. He may likewise give away, or offer in charity any amount he may wish. Some scholars say that one may eat half, and give away the other half in charity, while others say that the meat be divided into three parts. Of these one may keep a part, distribute a part, and give in charity the third part.

Muslim (1318) narrated that Jaabir ibn ‘Abd-Allaah (may Allaah be pleased with him) said:

“On the day of al-Hudaybiyah we offered the sacrifice with the Messenger of Allaah (peace and blessings of Allaah be upon him), a camel on behalf of seven and a cow on behalf of seven.

According to another report, it was narrated that Jaabir (may Allaah be pleased with him) said:

We performed Hajj with the Messenger of Allaah (peace and blessings of Allaah be upon him), and we sacrificed a camel on behalf of seven and a cow on behalf of seven.

Abu Dawood (2808) narrated from Jaabir ibn ‘Abd-Allaah that the Prophet (peace and blessings of Allaah be upon him) said:

“A cow on behalf of seven and a camel on behalf of seven.” Classed as saheeh by al-Albaani in Saheeh Abi Dawood.

The Prophet Muhammad ﷺ said :

« كُلُّ غُلَامٍ مُرْتَهَنٌ بِعَقِيقَتِهِ, تُذْبَحُ عَنْهُ يَوْمَ سَابِعِهِ, وَيُحْلَقُ, وَيُسَمَّى »

« Every boy-infant is a pledge agains this ‘Aqiqah, to be slaughtered on the seventh day, he is given a name and his headis to be shaved. »

(Abu Dawud and an-Nasa’I)

Ground steak can be eaten raw, in tartar or cooked. For young children, especially those under 3 years of age (and as a precautionary measure up to 15 years of age), people over 65 years of age and pregnant women, who are considered sensitive populations, it is recommended by the health authorities to thoroughly cook ground beef, whether it is frozen or fresh (also called refrigerated). For other consumers, it can be served "rare", "medium" or "well done" depending on individual tastes.

Cooking "Rare" ground steak

Achieving the "cooked through" degree for the minced steak means reaching a core temperature of at least +70°C: after cooking, the inside should be greyish-brown and under no circumstances still red or pinkish. This grey-brown colour indicates that the core protein has been cooked, which also helps to destroy any bacteria that may be present, such as Escherichia coli (2) or salmonella. If it is "well cooked through", the burger can then be eaten by everyone.

Cooking ground beef "medium rare".

For example, on the grill (+ 260°C), a 100 gram frozen burger will be "well done" after 13 minutes of cooking with 3 successive turns at regular time intervals. Under the same conditions, a fresh, or thawed, burger will be "well done" after 8 minutes of cooking.

Preserve the burger

Upstream, professionals in the meat industry implement a large number of preventive measures in terms of hygiene and microbiological safety (3) (e.g. respect for the cold chain, cleaning and disinfection of equipment, etc.). In turn, the consumer must adopt simple but essential hygiene rules from the purchase of the minced steak to its preparation, through its conservation.
