Sahih Muslim Hadith 4836 Narrated by Jabir ibn Abdullah

Allah's Messenger (saws) said: Sacrifice only a grown-up animal, unless it is difficult for you, in which case sacrifice a ram (of even less than a year, but more than six months' age).

The Prophet (saws) said: (Of the Sacrifice) eat of it, and feed of it to others, and store of it.

Fiqh-us-Sunnah Fiqh 5.115

A person offering a sacrifice may consume, without any restrictions, any amount of meat he may desire. He may likewise give away, or offer in charity any amount he may wish. Some scholars say that one may eat half, and give away the other half in charity, while others say that the meat be divided into three parts. Of these one may keep a part, distribute a part, and give in charity the third part.

Muslim (1318) narrated that Jaabir ibn ‘Abd-Allaah (may Allaah be pleased with him) said:

“On the day of al-Hudaybiyah we offered the sacrifice with the Messenger of Allaah (peace and blessings of Allaah be upon him), a camel on behalf of seven and a cow on behalf of seven.

According to another report, it was narrated that Jaabir (may Allaah be pleased with him) said:

We performed Hajj with the Messenger of Allaah (peace and blessings of Allaah be upon him), and we sacrificed a camel on behalf of seven and a cow on behalf of seven.

Abu Dawood (2808) narrated from Jaabir ibn ‘Abd-Allaah that the Prophet (peace and blessings of Allaah be upon him) said:

“A cow on behalf of seven and a camel on behalf of seven.” Classed as saheeh by al-Albaani in Saheeh Abi Dawood.

The Prophet Muhammad ﷺ said :

« كُلُّ غُلَامٍ مُرْتَهَنٌ بِعَقِيقَتِهِ, تُذْبَحُ عَنْهُ يَوْمَ سَابِعِهِ, وَيُحْلَقُ, وَيُسَمَّى »

« Every boy-infant is a pledge agains this ‘Aqiqah, to be slaughtered on the seventh day, he is given a name and his headis to be shaved. »

(Abu Dawud and an-Nasa’I)

The first rib, known as a chop, is more beautiful, well fleshed, with a nice tender meat, without aponeurosis; its handle is straight, it is slightly greasy on the edges. The second rib, with a ribbed edge, is softer than the first but its nut is less beautiful; its handle is curved.

Veal chops can be grilled or pan-fried. When they are sold whole, in a square, they are roasted in the oven.

They can be grilled or pan-fried (in very hot fat) over high heat and on both sides at first in order to grasp the surface and caramelize the juices that will keep a maximum of juice inside. Then, depending on the type of rib, its thickness and the taste of each one, count 2 to 5 minutes of cooking time per side over moderate heat. Take care to "feed" them by basting them regularly with the cooking juices when they are prepared in the pan. They can be eaten natural, just salted and peppered, but also accompanied by their cooking juices or a small sauce.

When they are roasted in squares, their light fat cover protects them from the heat of the oven. Before cooking a rack of veal chops at 180° C maximum, for 20 to 25 minutes per pound, quickly sear the meat side over high heat in hot fat: the caramelized juices will keep a maximum of juice inside. Remember to remove the bones from the base of the meat, which will make it easier to cut.

Whatever the cooking method, it should be like veal, with all its finesse and delicacy. Grilled, pan-fried or roasted veal can be eaten just slightly pink or medium, which preserves its softness.

Also remember not to cook it straight from the fridge: leave it at room temperature for a while to avoid a thermal shock during cooking, which can cause the muscle fibers to contract and harden the meat. Similarly, a short resting time under a sheet of aluminum foil will allow the meat to relax and the heat to distribute itself evenly, resulting in even more tender meat.
